You should ask them how trhey make their chicken. I make mine with different spices but, the only thing I know of that makes it reddish might be chipotle. As far as the shredded shicken goes, you just boil it until it falls apart easily so it will shred. I use spices like Adobo, and ancho chili, it is in a powder and adds flavor without the spicyness.

The meat is tender pull it out and couple of red chili peppers but you like season with red chili peppers pour in water above the chicken on rack usually use whatever kind you can.
